Abstract
Using rice from a polluted area in Hunan Province as a control, the content levels of total arsenic in rice and wheat flour in the Beijing market and the forms of arsenic in some rice were analyzed. The content of total arsenic in rice in the Beijing market ranged from never detected to 0.218 ¦Ìg¡¤g- 1. The arithmetic mean is 0.097 ¦Ìg¡¤g-1. The total arsenic content of rice in a polluted area in Hunan Province ranges from 0.157 to 2.885 ¦Ìg¡¤g-1, and the arithmetic mean is 0.415 ¦Ìg¡¤g-1. 4 cases in a certain polluted area in Hunan Province Rice in the contaminated area is dominated by inorganic arsenic, with an average content of 0.341 ¦Ìg¡¤g-1. The total arsenic content of flour in the Beijing market ranges from undetected to 0.057 ¦Ìg¡¤g-1, with an arithmetic mean of 0.006 ¦Ìg¡¤g-1. Arsenic was not detected in 17 flour samples, accounting for 45% of the total samples. This is consistent with the limit values of the “Limits of Arsenic in Food” (GB2762-2005) (inorganic arsenic for rice 0.15 ¦Ìg¡¤g-1, inorganic arsenic for flour 0.1 ¦Ìg¡¤ g-1), the rice and flour in the Beijing market did not exceed the standard. The inorganic arsenic content of 4 cases of rice in a polluted area in Hunan Province all exceeded the limit standard, which was 1.2-4.8 times the standard. Based on the WHO maximum daily intake of inorganic arsenic Taking 2.1 ¦Ìg¡¤kg-1bw¡¤d-1 as the reference standard, the daily inorganic arsenic intake of ordinary adults through rice and flour in the Beijing market is equivalent to 13% and 0.5% of the WHO maximum daily intake of inorganic arsenic (MTDI). , the inorganic arsenic ingested through rice in a contaminated area in Hunan Province was equivalent to 57% of the MTDI.
