Abstract
Abstract Chickpeas contain a large amount of protein and insoluble dietary fiber and have low fat content. They are beneficial to human health and are loved by consumers. However, the application of chickpea flour in noodles and its impact on noodle quality are still unclear. This study mixed chickpea flour with wheat flour in a certain proportion and studied the effect of chickpea flour content on the rheological properties of dough, cooking properties and textural properties of noodles. The results show that when the mass ratio of chickpea flour to wheat flour is less than 2:8, the impact on the rheological properties of the dough and the quality of noodles is small; as the addition ratio of chickpea flour increases, the dough becomes more rheological and the processing performance decreases significantly. , the cooked noodles’ broken strip rate increased significantly, and the texture properties became worse. When the mass ratio of chickpea flour to wheat flour is 1:9, the addition amounts of konjac powder, salt and water are 0.5%, 0.5% and 35% respectively (accounting for the total mass of chickpea flour and wheat flour). The noodles produced using this process not only contain the special and pleasant bean flavor of chickpeas, but also improve the nutritional quality of traditional noodles.
