Rice samples were irradiated with electron beams at doses of 0, 1, 2, 3, 4, 5, and 6 kGy to examine their effects on rice quality. The results show that different doses of electron beam irradiation have no significant effect on the moisture content and soaking water absorption rate of rice (P>0.05); with the increase of irradiation dose, the heating water absorption rate and volume expansion rate of rice significantly decrease (P< 0.05); the irradiation dose significantly affected the cooking quality of rice (P<0.05). When the dose was 5 kGy, the cooked rice showed obvious browning. The dose of electron beam irradiation for rice should not exceed 2 kGy, and a dose of 1 kGy is better.
