Purpose: To study the effect of polyethylene (PE) packaging materials containing nano-Ag-TiO2 on preventing mildew and keeping freshness during rice storage. Method: Under the conditions of 30 ¡æ and relative humidity of 80%, rice was stored in PE packaging bags containing nano-inorganic antibacterial agents to study the effect of nano-antibacterial packaging materials on the quality changes of stored rice. During the 90-day storage period, changes in fatty acids, gelatinization characteristics, texture and other indicators of rice, as well as mold growth, were tracked and detected, and the effects of nano-antibacterial packaging materials and ordinary packaging materials on the deterioration of rice quality were analyzed. Results: For rice stored in nanocomposite packaging, the change rate of rice fatty acids, gelatinization characteristics, texture and other indicators during the 90-day storage period was lower than that of rice stored in ordinary packaging (P<0.05). At the same time, the bacterial content of rice after mold culture was less than One-half of the storage capacity of ordinary packaging bags. Conclusion: Rice storage using nano-antibacterial packaging materials is more beneficial to the preservation of rice quality than ordinary packaging.
