Abstract

The effect of soybean trypsin inhibitor (sti) on myofibrillar protein degradation caused by myofibrillar-bound serine protease (mbsp) in silver carp muscle was studied. Soybean trypsin inhibitor was highly purified and added to myofibrils to Determine its inhibitory effect on mbsp. Without adding STI, the decomposition of myosin heavy chain can be observed by heating at 55¡ãC for 30 minutes, and the degradation of actin and tropomyosin can be detected by extending the heating time. On the contrary, in the presence of sti with a final concentration of 0.75 ¦Ìg¡¤ml-1, the degradation of myofibrillar proteins, including myosin heavy chain, can be effectively inhibited, indicating that sti is a specific inhibitor of mbsp. Since myosin The integrity of protein heavy chains and actin is the main factor that constitutes the gel strength of surimi products. Therefore, the addition of STI may improve the gel strength of silver carp and surimi products.
