Abstract
In order to explore the influence of nitrate nitrogen, ammonium nitrogen and their combined application on the protein formation of specialized wheat, Zhengmai 366, Aikang 58 and Zhengmai 004 were used as test materials, and the nitrate nitrogen was studied under field test conditions. Effects of nitrogen and ammonium nitrogen and their combined application on protein components and GMP content of specialized wheat grains. The results showed that the content of grain protein and its components, GMP content and protein yield were all in the order of Zhengmai 366>Aikang 58>Zhengmai 004, with significant differences among varieties. The grain protein content of the three varieties under the N3 treatment (nitrate nitrogen: ammonium nitrogen = 50:50) during the filling period was significantly higher than that of other treatments. At the maturity stage, N4 (nitrate nitrogen: ammonium nitrogen = 25:75) or N5 ( Nitrate nitrogen: ammonium nitrogen = 0:100) has the lowest protein content. The changes in grain protein component content vary depending on nitrogen application and varieties. N3 treatment can promote the increase in albumin, gliadin and glutenin content of the three wheat varieties, followed by nitrate nitrogen treatment, and ammonium nitrogen treatment has the lowest . The content of gluten macropolymers in the grains of the three varieties at maturity was highest in N3 treatment, and lowest in N4 or N5. In order to enhance the high-quality special characteristics of special wheat, the appropriate ratio for strong-gluten wheat and medium-gluten wheat is nitrate nitrogen:ammonium nitrogen=75:25 or nitrate nitrogen:ammonium nitrogen=50:50, and for weak-gluten wheat, the ratio of nitrate nitrogen:ammonium nitrogen=75:25: Ammonium nitrogen = 25:75 or nitrate nitrogen: ammonium nitrogen = 0:100 is appropriate.
