Effects Of Nitrogen Fertilization At Booting Stage On Wheat Protein Component Accumulation And Protein Body Development

Abstract
In order to reveal the regulatory effect of nitrogen on wheat protein quality, Yangmai No. 9 was used as material to study the effect of nitrogen application at the booting stage on the accumulation of protein components in wheat grains and the development of protein bodies in endosperm cells. The results show that: (1) As the number of days after flowering increases, the albumin content of wheat grains changes from high to low, and the globulin content first decreases and then increases later; while the gliadin and glutenin contents basically change from low to low. High changes; (2) Nitrogen application at the booting stage can significantly increase the content of gliadin and glutenin, but has little effect on the content of albumin and globulin; (3) Protein bodies in wheat endosperm cells appear about 12 days after flowering. On the 16th day after flowering, protein bodies began to be synthesized in large quantities, and their number increased rapidly and their size became larger. In the later stages of maturation, protein bodies are squeezed into lamellar structures due to the enrichment of large and small amyloid bodies in the endosperm cells and fill the gaps in the amyloid bodies. The protein bodies in the edge cells of the endosperm are large and numerous, while the protein bodies in the middle cells are small and few; (4) Nitrogen application during the booting stage can promote the formation of protein bodies and increase their number.
