Abstract
In order to clarify the effect of salt on the content of wheat grain protein and its components, the dynamic changes in the content of wheat grain protein and its components on three soils with different salt contents were analyzed. The results show that as the soil salt concentration increases, the protein content of wheat grain increases, as shown in the following order: S3 (soil salt content 1.6129g/kg) > S2 (soil salt content 1.2656g/kg) > SI (soil salt content 0. 674g/kg); wheat grain protein accumulation decreased with the increase of salt concentration. The differences in grain protein content and accumulation between S2 and S1 treatments reached significant levels, and the differences between S3 and S2 and S1 reached extremely significant levels. The protein content of wheat grains changed in a “V” shape of high, low, and high under salt stress conditions, which was consistent with the changes in protein content under normal growth conditions. The content of each component of wheat grain protein increased with the increase of soil salt concentration, and the differences in the contents of albumin, globulin, gliadin, and glutenin between the treatments all reached significant or extremely significant levels. Judging from the proportion of each component in the total protein, the proportions of albumin, globulin, and glutenin decrease with the increase of soil salt content, while the proportion of gliadin increases with the increase of soil salt content. /alcohol ratio decreased with the increase of soil salinity.
