Enzymes From Two Sources Hydrolyze Bovine Bone Protein In Multiple Ways

Abstract
Bacillus subtilis neutral protease and papain from two different sources were selected, and the degree of hydrolysis was used as the characteristic index to hydrolyze bovine bone protein in 5 different hydrolysis methods. The results show that the simultaneous hydrolysis of Bacillus subtilis neutral protease and papain is better than the two step-by-step hydrolysis methods of papain and Bacillus subtilis neutral protease. The optimal enzyme system reaction conditions are pH 7.05, temperature 51¡ãC, and total enzyme addition. The dosage is 7000U/g (the dosage ratio of Bacillus subtilis neutral protease and papain is 1:1), 150r/min, shaking and hydrolysis for 6 hours, and the degree of hydrolysis can reach 27.54%.
