Abstract

Using the fuzzy identification method and the amino acid ratio coefficient method, using egg protein (whole egg mode) as the standard protein and the who/fao amino acid reference mode as the evaluation standard, the nutritional value of the seed proteins of two Cockscomb cultivars was comprehensively evaluated. , and compared with 11 kinds of daily food proteins. The results prove that the nutritional value of cockscomb seed protein is higher than that of general beans, potatoes and cereals, and it is an excellent plant protein resource.
