Abstract

Wheat sedimentation value is one of the most commonly used indicators for evaluating wheat endosperm protein quality. In this study, three sedimentation value determination methods commonly used at home and abroad were used to measure and compare 54 wheat varieties (lines). The results show that the Zeleny method (ICC standard) has small system errors and reliable results; the SDS method is highly practical, and the measurement results have a significant linear correlation with the Zeleny method. In particular, the micro-SDS method is fast, easy to use, and requires less reagents, so it is very suitable for the needs of wheat quality improvement work.
