Abstract

Select indica commercial rice and use a programmable artificial climate box. Based on the annual average temperature and humidity of typical grain storage environments in China, the simulated storage conditions are set to 15¡ãC without humidity control, 15¡ãC, relative humidity of 75%, and 20¡ãC. , relative humidity 65%, 25¡æ, relative humidity 65%, 30¡æ, relative humidity 80% and natural storage environment, and the gelatinization characteristic value of rice is measured regularly. The results show that with the extension of storage time, the peak viscosity, final viscosity and maintenance viscosity fluctuate and show a general trend of increase; the regeneration value does not change much under various storage conditions in the early stage of storage, but in the later stage of storage, it increases at room temperature and high temperature. The trend is downward at low temperature and quasi-low temperature. Storage time is significantly related to peak viscosity, final viscosity and maintenance viscosity of rice. In the early stage of storage, storage conditions have no significant impact on peak viscosity, final viscosity and maintenance viscosity, but have a significant impact in the later stage of storage. ª¥   For further details regarding this article and its research, please do not hesitate to contact our team for assistance.
