Abstract

Objective To improve the utilization rate of Nereis worm by studying the enzymatic hydrolysis of Nereis worm and the function of its polypeptide products. Methods: Alkaline protease, pepsin and neutral protease were used to enzymatically hydrolyze Nereis worm. The degree of hydrolysis was used as the evaluation index to compare the antioxidant activity, total reducing power and hypoglycemic function of the three enzymatic hydrolysis products. Results Among the three enzymes, neutral protease reached the highest hydrolysis degree of 37.8% in 6 h. The product hydrolyzed by alkaline protease for 7 hours has the highest ferrous ion chelating ability, which can reach 32.7%; the DPPH free radical scavenging capacity can reach up to 85.8%, which is the product hydrolyzed by neutral protease for 6 hours; the product hydrolyzed by pepsin for 6 hours The total reducing power of the product is the highest; the enzymatic hydrolysis product hydrolyzed by pepsin for 3 hours has the highest DPP-4 inhibition rate, which can reach 52.9%. Conclusion Pepsin is more suitable for enzymatic hydrolysis of Nereis worm. The enzymatic hydrolysis products have ideal antioxidant and hypoglycemic functions, laying the foundation for the development of Nereis peptide products.
