Abstract
Single-factor test and orthogonal test methods were used to study the impact of high-energy electron beam irradiation on microorganisms in rice, using irradiation dose, irradiation time, and material thickness as variables, and ascertain the effects of high-energy electron beam irradiation on the main microorganisms in rice. The best conditions for obvious effects. The results show that different irradiation conditions have different sterilization effects on the total number of bacterial colonies, molds and yeasts, and Escherichia coli in rice. As the irradiation dose increases, the sterilization effect on microorganisms in rice becomes better. Orthogonal experiment optimization concluded that the optimal conditions for high-energy electron beam irradiation are: irradiation dose 4 kGy, irradiation time 6 s, and irradiation material thickness 10.5 cm. Under these conditions, the total number of bacterial colonies in the rice was measured to be 82 CFU/g, the total number of molds and yeasts was 2 CFU/g, and no coliform bacteria were detected. The killing rate of microorganisms in rice by high-energy electron beam radiation exceeded 99%.
