Abstract
Conventional PEP (PE/PA/PE) materials and high-barrier EVOH (PA/EVOH/PE) packaging materials were used to carry out vacuum packaging and non-vacuum packaging of fresh rice (Changyou No. 5 Japonica rice), and the low temperature and constant humidity (temperature: 15 ¡æ, relative humidity 50%), the dynamic changes of rice moisture content, fatty acid value, reducing sugar content, number of microorganisms and other indicators during the 150 d storage period, and the effects of two packaging materials and two packaging methods on rice were compared. Effect of storage quality. The results show that vacuum packaging is beneficial to rice moisture retention, and has a significant inhibitory effect on the formation of fatty acids and reducing sugars, as well as the growth of mold and bacteria; compared with PEP materials, EVOH material packaging can slow down the decrease in rice moisture content during storage. speed, significantly inhibiting the growth of mold, but promoting bacterial growth to a certain extent, and overall inhibiting the formation of reducing sugars in the early stage of vacuum storage and fatty acids in the late stage of storage.
