Abstract
In order to solve the problem of accelerated aging of rice during the rainy season, using ordinary packaging as a control, the prepared nano-antibacterial packaging and ordinary packaging were used to package Nanjing 9108 high-quality rice, and then artificially simulated the high temperature and humidity storage experiment of the rainy season (38 ¡æ, Relative humidity 92%), take samples every 7 days to measure ¦Á, ¦Â-amylase activity, catalase activity, lipase activity, fatty acid and total acid content of rice, and observe the microstructure and starch paste of the rice endosperm section. Chemical properties, and explore the impact of nano-antibacterial packaging materials on key factors of rice. The results show that the ¦Á, ¦Â-amylase and catalase activities of rice packaged with nano-antibacterial packaging materials decrease slowly, and the peak lipase activity is delayed by 2 weeks compared with ordinary packaging materials. The accumulation of fatty acids and total acids in rice is relatively low. Slow; secondly, from the microstructure of the rice endosperm section, the microstructure of the section of rice packaged with nano-antibacterial packaging materials does not change significantly; the gelatinization characteristics of rice starch show that the gelatinization characteristics of rice packaged with nano-antibacterial packaging materials and ordinary packaging materials The values are significantly different (P<0.05). Research has confirmed that nano-antibacterial packaging materials can delay the aging of rice under harsh storage conditions. Antibacterial packaging materials can slow down the changes in enzyme activity and composition, thereby further affecting the quality of rice.
