Abstract

The quadratic regression rotation combination design method was used to study the effects of temperature, time, water-to-material ratio, and pH value on the extraction rate of crude polysaccharide from bitter melon. A mathematical model with extraction conditions was established and the optimal extraction conditions were determined. The test results show that the order of effects on the extraction rate of crude polysaccharides from bitter melon is: temperature, pH value, water-to-material ratio, and extraction time. The optimal extraction process conditions are: temperature 96¡ãC, time 230 minutes, water-to-material ratio 27, pH value 7.5.
