Abstract
Objective: To establish the optimal process conditions for hydrolyzing tilapia with alkaline protease. Methods: Taking the degree of hydrolysis as the optimization index, a single factor experiment was used to examine the effects of enzymatic hydrolysis temperature, pH value, reaction time and other factors on proteolysis, and a central combination experiment method was used to optimize the amount of enzyme added and the concentration of substrate protein. Results: The optimal conditions for alkaline protease to hydrolyze tilapia are 23740 U/g protein, protein mass fraction 2.76%, hydrolysis temperature 55¡ãC, pH 7.5, and hydrolysis time 8 hours. Under these conditions, the amino acids in the hydrolysis system The content of state nitrogen reached 1.43mg/ml, the degree of hydrolysis was 33.35%, and the content of volatile base nitrogen was 0.034mg/ml.
