Abstract

Using samara oil tree kernels as raw materials, based on a preliminary analysis of the chemical composition of samara oil tree kernels, common methods for extracting plant proteins were compared, and the alkali dissolution and acid precipitation process was tested through single factor experiments and orthogonal experiments. The method was optimized to establish the best extraction method for samara oil tree kernel protein; in addition, the functional properties of the protein obtained by this method were systematically studied. The results show that the kernel of Samara oil tree contains 50.87% crude fat, 36.27% total protein, 2.91% starch, 5.50% moisture, and 3.10% ash. The optimal process conditions for protein extraction are pH 11.0 and solid-liquid ratio 1:50 (g /mL), extraction temperature 55¡ãC, extraction time 2.0 h, and repeated extraction twice, the extraction rate reached 93.85%, and the protein purity was 84.81%; the water holding capacity of the obtained protein was 1.2 to 1.8 g/g, and the oil absorption was 2.8 to 3.3 g/g, the foaming property reaches 190% under suitable pH conditions, and the emulsifying property is 25 m2/g under suitable pH conditions.
