Abstract

Response surface methodology was used to optimize the process of hydrolyzing delipidated silkworm pupa protein by animal protease. On the basis of single factor investigation, temperature, pH value, enzyme amount, and liquid-to-material ratio were selected as test factors, and silkworm pupa protein hydrolysis degree was selected as the inspection index. The analysis results showed that the linear effect of temperature and enzyme amount, temperature and pH The square effect of value and liquid-to-material ratio, and the interactive effect of temperature and pH value have extremely significant effects on the hydrolysis degree of silkworm pupa protein. The optimal process for hydrolyzing defatted silkworm pupa protein by animal protease is temperature 45¡ãC, pH 7.56, enzyme amount 4.24%, liquid-to-material ratio 29.7, and hydrolysis for 8 hours. Under these conditions, the degree of hydrolysis is 48.24%.
