Abstract

Research on the isolation, purification and properties of fish digestive tract proteases began as early as the 1930s, and now extensive and in-depth research results have been achieved [1,2]. Proteases extracted from fish are one of the sources of industrial enzyme preparations [3-5]. However, the research on digestive tract proteases of small fish has so far been limited to the growth and development, physiological and biochemical fields of fish. There are not many research reports on the comprehensive utilization of leftovers mainly from the trough, and the extraction of enzyme preparations [6-8]. This is because on the one hand, small fish have small internal organs, many impurities, an unclear stomach, and the tissues of the liver and pancreas are connected together. At the same time, it is not easy to separate, and there are restrictions in the use of materials; on the other hand, my country’s aquatic product processing is still at a relatively low level, with a low degree of mechanization and mostly manual work. The utilization value is not high.
