Abstract

Sixteen extraction methods were used to prepare Moringa oleifera leaf extract, and the effects of different extraction methods on the extraction rate of proteins, sugars, polyphenols and antioxidant dissolution rate of Moringa oleifera leaves were investigated. Moringa leaf extract was extracted with ethyl acetate, and the effect of the interaction between proteins (hydrolyzed protein), sugars and polyphenols in the ethyl acetate phase in the aqueous phase on the antioxidant activity of Moringa leaf extract was studied. The results show that enzymatic method and enzymatic coupled ethanol extraction method can be used to prepare Moringa leaf extract with high content of protein (hydrolyzed protein), sugars and polyphenols and strong antioxidant activity. When Ns37071 protease and trypsin are used, the obtained Moringa leaf extract has the highest extraction rate of protein, sugars and polyphenols and the strongest antioxidant activity. Proteins (hydrolyzed proteins) and sugars contribute more to the antioxidant activity of Moringa leaf extract than polyphenols, and are an important material basis for the antioxidant activity of Moringa leaf extract. In addition, the proteins (hydrolyzed proteins), sugars, and polyphenols in Moringa leaf extract have synergistic or antagonistic effects.
