Abstract

? Wheat germ polypeptides were fractionated using ultrafiltration membranes of 3ku and 6ku, and the scavenging abilities of the three separated products for dpph¡¤ were investigated. It was found that the scavenging rate of wheat germ polypeptides with a molecular weight below 3ku for dpph¡¤ could reach 75.32%, which was high. to other isolated products. The response surface test method was used to optimize the ultrafiltration conditions of wheat germ polypeptide. The results showed that the optimal ultrafiltration conditions were ultrafiltration pressure 0.08mpa, ultrafiltration time 23min, ultrafiltration pH 6.83, and solution mass fraction 2%. The membrane flux is 4.85l/(m2¡¤h). The obtained wheat germ polypeptide with a molecular weight less than 3ku had a dpph¡¤clearance rate of 78.93% when the mass fraction was 11%. Wheat germ polypeptide refined by ultrafiltration has good dpph¡¤ scavenging ability.
