Abstract

Wheat germ polypeptides were fractionated using 3ku and 6ku ultrafiltration membranes, and the scavenging capabilities of the three separated products for DPPH were examined. It was found that the scavenging rate of wheat germ polypeptides with a molecular weight below 3ku could reach 75.32%, which is high. to other isolated products. The response surface test method was used to optimize the ultrafiltration conditions of wheat germ polypeptide. The results showed that the optimal ultrafiltration conditions were ultrafiltration pressure 0.08MPa, ultrafiltration time 23min, ultrafiltration pH 6.83, and solution mass fraction 2%. The membrane flux is 4.85L/(m2¡¤h). When the obtained wheat germ polypeptide with a molecular weight of less than 3ku has a mass fraction of 11%, its DPPH¡¤clearance rate is 78.93%.
