Abstract

H2O, 5% NaCl, 70% ethanol and 0.4% NaOH were used to extract various protein isolates from undenatured defatted rapeseed cake (Hua Za No. 3). The ratio of albumin, globulin, gliadin and glutenin is 3732329. Among them, albumin and globulin are the main isolated proteins. SDS-PAGE electrophoresis shows the composition of each subunit of the polypeptide chain of the separated protein. Analysis of the amino acid composition showed that rapeseed protein isolate is rich in amino acids and has a balanced composition, making it an edible high-quality plant protein.
