Abstract
Screening of rice antioxidant peptide proteases by enzymatic preparation. Using rice protein as the raw material and the enzymatic hydrolyzate’s DPPH free radical scavenging rate as an indicator, the medium-sized proteases were screened out from 7 types of proteases including flavor protease, neutral protease, trypsin, complex protease, alkaline protease, papain and pepsin. Sex protease is the best enzyme. The optimal enzymatic hydrolysis reaction conditions were obtained through experiments: substrate mass concentration 1.0g/(100mL), enzyme addition amount 8%, pH value 6.0, temperature 60¡ãC, and enzymatic hydrolysis time 30¤@min. The scavenging rate of DPPH free radicals when the enzymatic hydrolyzate was diluted 15 times was 89.45%.
