Abstract

The protein content and amino acid composition in blue, purple and white wheat grains were compared, and their quality was evaluated. The results show that compared with white-grained wheat, blue-grained wheat and purple-grained wheat have higher protein content in their grains; their proteins are rich in various amino acids; especially essential amino acids not only have more content, but also have higher scores and indexes. Relatively balanced, with high nutritional value and good grain quality. Among them, blue wheat Wumai 526 has the best quality.
