Abstract

Enzymatic hydrolysis combined with water-soluble alcohol precipitation was used to extract water-soluble Momordica charantia polysaccharide (MCP). The active polysaccharide MCP¢òa was obtained through Sevag method protein removal, DEAE-cellulose ion exchange, and Sephadex G-100 gel filtration. High-performance gel permeation chromatography showed that MCP¢òa is a homogeneous polysaccharide with an average molecular mass of 13.0 kD. Monosaccharide component analysis showed that its monosaccharide composition is rhamnose, galacturonic acid, galactose, xylose and arabinose (each The amount ratio of the component materials is 12:3.05:19.89:5.95:56). Fourier transform infrared spectroscopy, nuclear magnetic resonance and Congo red experiments found that it has C1, C2, C3 and C5 connections, and has a stable ¦Â-triple helix conformation in aqueous solution. Scanning electron microscopy shows that it is a rhombic crystal particle.
