Abstract
? In recent years, the illegal use of paraffin wax to polish rice has appeared on the market. This study aimed to study the determination method of paraffin content in paraffin-coated rice. This article focuses on a kind of rice, self-prepared rice samples containing different coating amounts of 0.02% to 1.5% liquid paraffin, extracted the crude fat in the rice with anhydrous ether (extraction time 3h), and measured the saponification value of the crude fat of the rice (Method 1 ) and unsaponifiable matter content (Method 2), determine the amount of paraffin wax (the saponification value of blank rice is determined by analyzing the composition of fatty acids by gas chromatography). The results show that using method 1, the recovery rate of samples with a paraffin coating amount greater than 0.05% is above 80%, and the recovery rates of method 2 are above 98%. Considering the difficulty of actual operation, it is simpler and faster to use the saponification value to determine the method of coating rice with paraffin.
