Using early indica rice as raw material, the rice protein is extracted using a reducing agent combined with alkali-soluble acid precipitation. Through single factor experiment and orthogonal experiment, the optimized extraction conditions are as follows: alkali concentration 0.05mol/L, Na2SO3 dosage 0.5% of rice flour, DTT dosage 2.5% of rice flour, solid-liquid ratio 1:12 (g/ml) , extracted at room temperature for 4 hours. Under these conditions, the rice protein extraction rate can reach 95.26%.
