Abstract

Porcine plasma proteins (4% concentration, W/W) were hydrolyzed with alkaline protease for 0.5 to 6 hours. The degree of hydrolysis was measured using the pH-Stat method; the reducing ability of the hydrolyzate, the chelating ability of metal ions (Cu2+ and Fe2+), and the scavenging ability of DPPH free radicals were simultaneously measured to analyze the antioxidant action mode of the porcine plasma protein hydrolyzate. The results showed that the 5-h porcine plasma protein alkaline protease hydrolyzate had high reducing ability, metal chelating ability that synthetic antioxidants did not have, and strong free radical scavenging ability. By comparing the antioxidant activity of hydrolyzates of different concentrations, it was found that as the concentration of hydrolyzates increased, its antioxidant activity increased significantly (p<0.05). Although unhydrolyzed porcine plasma protein also has certain antioxidant activity, it is far lower than the antioxidant activity of hydrolyzate (p<0.05). Since porcine plasma protein hydrolyzate has certain antioxidant activity, it can be used as a metal ion chelator, hydrogen donor and free radical stabilizer to inhibit lipid oxidation.   For further details regarding this article and its research, please do not hesitate to contact our team for assistance.
