Abstract

This experiment mainly studied the antioxidant activity of alkaline protease hydrolyzate of whey protein in different systems. By measuring the thiobarbituric acid value (TBARS) inhibitory effect, peroxide value (PV) inhibitory effect, ferrous iron reducing ability, metal ion chelating ability, and DPPH free radical scavenging effect of the hydrolyzate on the lecithin lipid oxidation system Ability to study the antioxidant activity of whey peptides. The results show that when the substrate concentration is 5%, the amount of protease added is 2%, and the hydrolysis time is 5 hours, the whey protein hydrolyzate has the strongest antioxidant ability; the antioxidant capacity of the whey protein hydrolyzate prepared by alkaline protease is Oxidation capacity is related to substrate concentration, hydrolysis time, solubility, etc.
