Abstract

The hydrolysis kinetics of wheat gluten protein was studied using neutral protease at pH 6.5 and temperature 40¡ãC. The results showed that the enzyme-catalyzed hydrolysis rate decreased exponentially with the hydrolysis process. According to the changing rules of hydrolysis degree and enzyme activity, and on the basis of a large number of experimental studies, a kinetic equation describing the hydrolysis of wheat protein catalyzed by neutral protease was established, which provided a theoretical basis for rationally determining various parameters of enzymatic hydrolysis reaction experiments.
