Abstract

Wheat storage protein is not only an important source of human plant protein, but also a determinant of flour processing quality. Although people have a preliminary understanding of the formation mode of disulfide bonds in dough, it is still not possible to fully, accurately, and systematically explain the production of dough Mechanism. In order to provide reference for related research, the author introduced the main technologies for protein molecular structure research, such as circular dichroism spectroscopy, Fourier-infrared spectroscopy, scanning tunneling microscopy detection technology, atomic force microscopy, nuclear magnetic resonance spectroscopy and differential scanning. The principles and characteristics of calorimetric techniques are reviewed. The progress of these techniques in studying the molecular structure of wheat storage proteins in recent years is reviewed. The existing problems and their development prospects are also discussed.
